According to the data, the order volume of crayfish takeout in 2018 is 2.6 times that in 2017, and the transaction volume is 4.3 times that in 2017. Guangzhou, Beijing, Shanghai, Shenzhen and Chengdu are the five cities with the largest consumption of crayfish takeout. According to Hungry Mohes word-of-mouth consumption data, Hebei, Hainan, Shanghai, Sichuan and Henan have become the five provinces with the fastest growth in consumption of crayfish at night.
According to incomplete statistics, in 2018, nearly 30 new policy supporting documents were issued in all parts of the country, such as guidance, industrial planning and so on, aiming at the crayfish industry or taking the crayfish industry as the main body.

For example, in 2018, the leading chitin enterprise Huashan aquatic products treated 100,000 tons of abandoned shrimp shells, produced 4,000 tons of chitin, 3,500 tons of high-value-added products such as glucosamine hydrochloride, high-density chitosan and chitosan-oligosaccharide, and the sales revenue of chitin and derivatives was nearly 3 billion yuan.
Cui said that thanks to the main paddy farming mode of crayfish, Hubei has become one of the main forces of crayfish production by virtue of its vast paddy field planting area and the advantages of farmersself-raising seedlings.
The growth rate of crayfish industry will decline
The report also points out that, in the medium and long term, the crayfish industry in China will generally maintain a steady and progressive development trend, but the growth rate will decline, and the overall supply-demand relationship of the industry will gradually balance.
